Ingredients

  • 160 g brown rice (raw) (cook according to instructions and cool to room temperature)
  • 300 g fresh tuna fillet (sashimi-grade, cut into cubes about 1.5 cm)
  • 2 pcs medium zucchini (cut into rounds and lightly grilled or sautéed)
  • 1 pcs ripe avocado (sliced, squeeze some lemon to prevent oxidation)
  • 120 g shelled edamame (frozen) (blanched and cooled)
  • 1 pcs carrot (cut julienne for crunchiness)
  • 2 tablespoons low-sodium soy sauce (for marinating the tuna)
  • 1 spoon rice vinegar (to add to the tuna marinade)
  • 1 spoon sesame oil (for the marinade and to lightly dress the bowl)
  • 1 spoon extra virgin olive oil (for grilling the zucchini)
  • 1 spoon sesame seeds (toasted, for garnish)
  • 1 pcs lime (juice for the marinade and dressing)
  • 1 teaspoon fresh grated ginger (optional, for the tuna marinade)
  • "q.s." salt and pepper (to taste; use little salt if using soy sauce)
  • "q.s." chili flakes (optional, for those who like it spicy)

Preparation

  1. 1

Cook the brown rice according to the instructions on the package, drain it and let it cool slightly.

    Durata indicativa: 25 min

Tip: Cook with double the amount of water and a pinch of salt; cool by spreading it on a plate to prevent clumping.

  2. 2

Prepare the marinade by combining soy sauce, rice vinegar, sesame oil, lime juice, and ginger; pour it over the tuna cubes and let marinate for 10–15 minutes in the refrigerator.

    Durata indicativa: 15 min

Tip: Do not marinate too long to maintain the tuna's texture; gently stir once.

  3. 3

Cut the zucchini into slices, season with olive oil, salt, and pepper, and grill or sauté them in a pan until lightly browned and crispy.

    Durata indicativa: 8 min

Tip: Cook them on high heat to get a slightly caramelized surface without losing too much water.

  4. 4

Blanch the edamame (2–3 minutes), drain and cool under cold water; prepare the carrot julienne and slice the avocado at the time of assembly.

    Durata indicativa: 5 min

Tip: Drain the edamame well to prevent them from releasing water into the bowl.

  5. 5

Assemble the poke bowls: spread the rice as a base, add marinated tuna, grilled zucchini, avocado, edamame, and carrot. Season with a drizzle of sesame oil, sesame seeds, and chili flakes if desired.

    Durata indicativa: 5 min

Tip: Arrange the ingredients in sections for a neat and appetizing visual effect.

  6. 6

Serve immediately or store in the refrigerator for up to 12 hours for meal prep, adding fresh avocado only at the time of consumption.

Tip: If prepared in advance, keep the dressings separate to maintain freshness.
