- 300 g cauliflower (floretti, puliti e tagliati a pezzetti)
- 1 pcs avocado (maturo ma compatto, a fette)
- 100 g shelled edamame (cooked and cooled)
- 80 g red cabbage (finely sliced)
- 1 pcs carrot (grated or julienned)
- 30 g tahini (for the dressing)
- 30 ml tamari (soy sauce) (o salsa di soia per la marinatura del tempeh)
- 15 ml sesame oil (for the dressing)
- 15 ml lime juice (circa 1 lime)
- 15 ml maple syrup (o miele per chi non è vegano, per la marinatura)
- 15 ml extra virgin olive oil (per arrostire il cavolfiore e saltare il tempeh)
- 10 g sesame seeds (toasted, for garnish)
- 2 pcs spring onions (affettati sottili per il topping)

Prepare the brown rice according to the instructions on the package and let it cool; you can also use well-cooled leftover rice.

Marinate the tempeh: in a bowl combine tamari, maple syrup, paprika, and garlic powder; immerse the cubes and let rest for at least 15 minutes.
